Lennie’s Bean Soup
Lennie was a wonderful woman who attended our church in Alaska. When she first shared this recipe, I was quite hesitant, as I was not a huge fan of beans. One sip and we were hooked.
Ingredients
- 1 pound of ground meat
- 1/2 pound bacon
- 2 chopped onions I use less
- salt and pepper to taste
- 1/2 tsp mustard
- 3/4 cup brown sugar
- 1/2 cup vinegar
- 1/2 cup ketchup
- 1/4 cup molasses
- 1 large can pork and beans
- 1 large can kidney beans
- 1 large can lima beans
- 1 large can butter beans
- 1 large can garbonzo beans
Instructions
- Brown ground meat, bacon, onions, and salt, and pepper until meat is cooked through.
- Add the seasonings (everything but beans). Simmer 20 minutes.
- Add the beans and their juices
- Bake 1 hour at 350 degrees
