Simple Mayonnaise
Simple, wholesome ingredients!
Equipment
- 1 immersion blender
Ingredients
- 1 large egg
- 1 tsp mustard
- 1 tbsp vinegar
- 1/4 tsp salt
- 1 cup neutral flavored oil olive oil, avocado oil, your choice
Instructions
- Add egg to a pint size mason jar.
- Add mustard, vinegar, salt and oil.
- Using immersion blender, trap the egg yolk in the blending head.
- Start blending, when you see the mixture begining to emulsify, slowly draw the blending head up, allowing more ingredient into the mix.
- Blend in an up and down motion, making slow progress to the top. Keep in mind the entire process takes only about 1 minute.
- Blend until all the oil is emulsified.
- Carefully remove blender head. Scraping off all mayonaise.
- Cap the jar with an air tight lid, store in the fridge.
Notes
Important: Always make sure the mason jar and immersion blender are dry when starting. Oil and water do not mix. Using wet equipment will prevent the mixture from emulsifying.Â
