Tried and True Family Favorite
I have made this recipe for years! Even though I use very little store-bought Velveeta in my kitchen, this was the one recipe that kept me buying that yellow block on occasion (until now). I even made this crowd favorite camping! I cooked it over an open fire, making a double boiler out of a large cast-iron frying pan with a metal grate. What is it about the smell of smoke and the crackle of a campfire that makes food taste even better?
Velveeta Queso Dip- Homestead Style
Here at Kowalski Mountain, we like to eat whole foods as much as we can. In general, we follow the 80/20 Rule. 80% of our food is homemade and homegrown. 20% of our diet we set aside for things that may not fit that criteria. Here are my homestead substitutions that make this delicious dip fit into our homemade and homegrown lifestyle just a little bit better! Though it’s really ok to make it from store-bought ingredients!
Homestead Substitution 1: First, I replace the processed cheese product with my homemade Amish Velveeta cheese. While I use raw milk, even if you don’t own a dairy animal, you can make this simple cheese at home with milk purchased in the grocery store. Made without the cheddar cheese powder, my Amish cheese reminds me of white American cheese. Just call it Velveeta queso blanco!

Homestead Substitution 2: I use homemade salsa in this recipe rather than a commercial product. Â The best part of making it myself, I know exactly what’s in it! Â Just homegrown vegetables picked and cooked at the peak of freshness. Simple spices and straightforward staples. I waterbath can the salsa to enjoy it all year long!

Homestead Substitution 3: Rather than use ground beef, we use ground venison. Try ground pork or sausage for a little extra zest!
I use store-bought chips; however, you can try homemade tortilla chips made with this tortilla recipe from my friend Kara at Grains in Small Places.
